If there is a health food I can't stop singing the praises of, it would have to be quinoa.
Besides the fact that it is tasty and quick to make, it is extremely versatile. I have made it with both sweet and savory dishes. I love using it either as a substitute for dishes that call for white rice, or as a side with chicken or fish.
My favorite two ways to prepare quinoa:

Did I mention its health benefits? Not only is it gluten-free, but it has tons of amino acids, dietary fiber, and protein, to name a few. I'm not a vegan, but I do appreciate how it is extremely vegan-friendly.
