Quinoa: Oh how I love thee

If there is a health food I can't stop singing the praises of, it would have to be quinoa.

Besides the fact that it is tasty and quick to make, it is extremely versatile.  I have made it with both sweet and savory dishes.  I love using it either as a substitute for dishes that call for white rice, or as a side with chicken or fish.

My favorite two ways to prepare quinoa:
1.) stuffed in roasted peppers: http://www.wholefoodsmarket.com/recipes/1767
2.) with avocados and black beans: http://susanssoups.com/?p=228

*Sorry, too lazy to copy into this post. ;)

Did I mention its health benefits?  Not only is it gluten-free, but it has tons of amino acids, dietary fiber, and protein, to name a few.  I'm not a vegan, but I do appreciate how it is extremely vegan-friendly.

Well, if you will excuse, my quinoa is almost done cooking.  Forks up!
